
LACROSSE, Wis. (WEAU) – The new year brings a focus on healthy eating. In January’s Harvest of the Month, Hy-Vee Dietitian Ruth Chipps, brings us a carrot recipe that’s refreshing and protein packed.
Carrot Protein Power Smoothie
Servings: 2
All you need:
1 Medium banana
1 C. carrots, cleaned, cut and cooked in 2 cups water until soft (about 10 minutes). It’s important to cook the carrots for smoothies so they blend easily. Another option is to use frozen carrots which are already softened by blanching.
½ c. Fairlife Core Power (vanilla) protein shake (or Low-fat milk or vanilla almond milk)
1 – 6 oz. Container Too Good vanilla ZERO SUGAR yogurt
½ serving (scoop) Performance Inspired whey protein powder, vanilla flavor)
2 Tbsp. Hy-Vee ground flax seed
1/4-1/2 c. ice
All you do:
Combine ingredients in blender and blend until smooth. Serve immediately.
